Saba dressing is obtained from the long cooking of the must of local vines, especially Lambrusco. It is sweet, that is why it is opposed to the Balsamic vinegar or to the other seasonings, which are sweet-and-sour. It has the consistency of a syrup and a good density. It is delicious with Panna cotta (cooked cream), creamy sweets, ice-cream, goat's milk cheese, ricotta( soft white unsalted cheese), pumpkin risotto and you can even use it as a secret ingredient in your summer cocktails.
