Our commitment is to produce “Parmigiano as in the old days”.
We have always been farmers, but decided to convert our farming to organic in 2000 and in 2003 we obtained the certification of “Milk from organic breeding” (certifying institution CODEX). Our cows are fed with mountain fodder and blends of cereals certified as organic and consequently without GMO.
Nutrition is considered the strategic phase of the entire producing process; in fact, it is the quality of the feeding that makes the difference in the quality of milk. The fodder of mountain comes from our pastures cultivated at over 700mt above sea level, it contains greens and essences unknown in other places and gives the milk, and therefore the cheese, superb aromas both for the organoleptic aspect and for the nutritional one. Fodder is given to cows in the traditional way, so that the cow can digest in a more natural way and can also select the fodder, in fact it picks only the best part and leaves the rest.
Organic milk contains 50-80% more of anti-oxidant principles (Source: Prober).
All our heads are born and grown up in our farm. We choose bulls carrier of KBB casein because of the high quality of the milk so rich in proteins, and not for the quantity of milk produced, in fact the daily quantity of milk produced by each cow is 23 kilos, which is by far inferior to the quantity produced by “industrial” cows.
The nutrition and care that we give to our animals, even before converting our farm to the organic system (we have used homeopathic remedies since 1992), allow our cows to have a very high life-span : we have cows that have already calved nine times (“industrial cows” average life-span: 5 years).
They are bred freely, since they are born to when they are with they first calf to the period of “dry” the live in our pastures; when they start the lactation period they live in the cattle shed, but they can still move in open spaces close to the shed.
