From Apennine Tosco Romagnolo, this cheese is made from the milk of sheep bred in the valleys between Romagna and Tuscany, rich in pastures and fragrant parfumes reminiscent of the pastures. The paste has compact structure and strong at time of cutting, the color is withe or yellow. The flavor is sweet, fragrant and crisp, characteristic of cheese matured in the hay, hay that covers the crust. Entire shape: from 1.5 to 2 pounds Seasoning approximately: 6 months
