Essenza (the Essence) is the last creation amongst the balsamic seasonings. In short, it is a San Giacomo Seasoning aged for another year in a smaller barrel. You can use it raw (if cooked it would be wasted) on risottos, on fresh or not very mature cheeses and on desserts. We are not very fond of very thick seasonings, as we think that thickness is a more appropriate quality for Traditional Balsamic Vinegars: in this way, you are sure that we have not used very concentrated or dense musts.
