Main characteristics: round softness that leaves space to acidity, never strong and able to balance the greasiness of a cheese which can be also very savoury or mature, as its consistency and texture are the ones of jelly. Parmigiano Reggiano and marbled cheeses are the best choices, but you can also match it with a goat's milk cheese. Other possible combinations are meat and chocolate (and in fact we have also chocolates with balsamic filling). If, by chance, you feel lonely and you catch yourself eating spoonfuls of balsamic jelly on your couch... don't worry! You will not be the first one!:-)
