Artisanal pasta

Pasta, especially the one with a filling (tortelli, cappelletti, ravioli...), is the pure essence of the Emilian cooking. The 'azdora', the dialectal word for the woman who is the head of a farming family, is always bent over the wooden board rolling out the sheet with the help of a rolling pin. This is a heavenly image that has been present in our imaginary since we were children.
